Biscuit Dough Ingredients

  • 2 cups All-Purpose Flour
  • 3 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 2 tbsp Sugar
  • ½ cup Softened Butter
  • 1 cup Buttermilk
  • 1 cup Blueberries fresh or frozen
  • 4 tbsp Heavy Cream

Streusel Topping Ingredients

  • ¼ cup All-Purpose Flour
  • 2 tbsp Brown Sugar
  • 2 tbsp Cold Butter
  • ½ teaspoon Cinnamon

Glaze Ingredients

  • 1 cup Powdered Sugar
  • 2 tbsp Heavy Cream
  • ½ teaspoon Vanilla Extract
  • The Zest of One Lemon
  • ¼ cup Lemon Juice
  • ¼ teaspoon Ground Cinnamon
  • 1 tbsp Butter to grease the pan
  • Set your oven to 400 degrees and preheat it. Place a large cast iron skillet in the oven with the 1 tablespoon of butter in it. After a few minutes, the butter will be melted, and you can remove the pan from the oven, swirling it to coat the bottom of the pan.

  • In a large bowl, stir together your flour, baking powder, salt, and sugar. Cut the butter into small pieces and add it to the bowl.

  • You can use a pastry blender or a fork to blend the butter into the flour mixture. Continue mixing until the butter is evenly distributed in the flour. You will end up with tiny bits of butter in the mixture.

  • Add the buttermilk to the flour mixture and stir with a spoon until it is fully incorporated and a dough is formed. You may not need all the buttermilk. Stop adding it when the dough begins to stick together.

  • Add the blueberries to the mixture, stirring gently, just until they are evenly mixed into the dough. If the berries are frozen, you do not have to thaw them. You may want to use your hands to blend them into the dough.

  • Cut the biscuits with a biscuit cutter into rounds, placing each on into the skillet with the sides touching. You may have to squeeze them into the pan to make them fit. Brush the biscuit tops with the heavy cream.

  • Now you can make the streusel topping. In a small bowl, stir together the flour, cinnamon, and brown sugar with a fork. Add the butter, using a fork to press and cut the butter into the dry ingredients. Sprinkle the streusel evenly over the biscuits, pressing it lightly to make it stick to the biscuits.

  • Place the pan in the oven, baking the biscuits for about 30 minutes until they are lightly browned on the top.

  • As the biscuits are baking, you can prepare the glaze by stirring together all the glaze ingredients in a small bowl with a wire whisk.

  • After the biscuits are baked, allow them to cool for about 10 minutes in the pan. Add spoonfuls of glaze to the tops of the biscuits, allowing it to run down the sides of them.

  • When you serve the biscuits, you can add additional glaze to the individual biscuits.
