Preheat your oven to 350 degrees and spray a 9 by 13 baking pan with cooking spray.
First, you will make the sauce mixture. In a medium-sized bowl, stir together the tomato sauce and the Italian seasoning. Set this aside.

Place half of the chicken cubes in a single layer in the baking pan.
Spoon half of the tomato sauce mixture over the top of the chicken.

Everyone nowadays seems to have to-do lists that are packed. Shopping, cleaning, work, and activities for the kids fill everyone’s time so that by the end of the day, most people want to flop on the sofa and not even think about that age-old question, “What’s for dinner?” In fact, that innocent question can make busy parents want to crawl under the sofa or scream in frustration.
Modern parents have several options for providing evening meals for their families. The first impulse that most of us have to resist is to hit a fast-food drive-through on the way home from football practice with the kids in the car. Of course, we all know that eating fast food several times a week is not only expensive but unhealthy.
A step-up from fast food is calling in an order at a nicer restaurant for a carry-out order. The food is a bit better, and you can find nutritious options at these places. Unfortunately, the price of feeding a whole family at a nice restaurant can be prohibitive to do this more than once or twice a month.
So, this leaves the option of eating at home for most evenings if you’re wanting healthier, inexpensive options. Frozen dinners like pizza rolls or chicken nuggets are popular with kids, but with high levels of sodium and fat and the addition of artificial flavorings, these options are far from nourishing.
To feed one’s family inexpensively and nutritiously, most people will need a selection of recipes that the family will eat and can be prepared quickly. Most folks can manage to prepare dinner if the prep time is only a few minutes and the baking time doesn’t take too long. Our recipe for Chicken Parmesan Casserole only takes a few minutes to prepare and bakes up in less than half an hour.
This recipe is definitely going to be a family favorite. It features diced boneless skinless chicken breast meat, which even picky kids like eating. It also has tomato sauce, seasoned with Italian seasoning. This taste is popular with kids because it brings to mind the flavors of two kid-friendly favorites–spaghetti and pizza. Layered in the casserole are two different kinds of cheeses, and it is topped with a crispy bread crumb topping which will turn golden brown in the oven.
This casserole can be spooned over cooked rotini pasta or even cooked, frozen ravioli. Choose either cheese ravioli or meat-stuffed ravioli. Either option will taste delicious. You can serve a bagged salad and pre-made frozen garlic bread to complete the dinner.
